Tortillarilla!

This is a staple food item that can be used for SO much...so so so much.  Lets start out by listing some things you can use tortillas in:

Ok that's alot of stuff tortillas can be used with, but just in case we missed a few here are some other examples:

Tacos
burritos
coated with cinnamon and sugar for a lovely dessert
fried for a puffy taco
baked crispy for a chip used in salads or dip

And finally the recipe:

Flour Tortillas
3 and ½ cups flour
1 teaspoon salt
1 teaspoon baking powder
3.5 oz lard or vegetable oil (7 tablespoons)
1 cup HOT water

 Combine all ingredients and knead for about 3 minutes.  Cover with a towel and let sit for a few minutes to rest while you get out and preheat your griddle between 5-7 (medium high heat),  get out your spatula, a plate to put cooked tortillas and a piece of foil to cover and keep them hot.

 Place 2 tablespoons of flour on your counter top; sprinkle just a little on the surface you are going to roll out your tortilla and dust the top of tortilla as you roll out.  Pick up and turn your tortilla as you roll out to keep the round shape.  Dust off excess flour and place tortilla on hot griddle and use spatula to turn once bubbles form.
